Serves 10 people

For the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Cocktail (produces 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Method

For the Syrup: Place the listed ingredients in a pot, bring to a light boil, stirring until the sugar dissolves. Next, take off the heat allowing it to reach room temperature entirely. Decant into a sterilised bottle, close it and refrigerate it chilled, it can be stored for up to a month.

Preparing the Batch Mix: Combine all the spirits and syrup in a sizeable container, let it rest for an hour, then filter it best through a fine cloth, making it perfectly clear.

For serving: Pour 85ml of your cocktail base into your mixing glass filled with ice, and agitate gently for one minute to chill. Pour to a chilled martini glass or a similar vessel, decorate with a few cranberries and complete it by giving it a light spray with the mandarin essence above the glass.
